Roux Cajun Eatery

About us

WHAT IS A ROUX?
(Sounds like 'ROO')

A roux is the base for so many delicious French dishes and therefore Cajun dishes. It is either oil or butter cooked with flour and is used to make gumbos, gravies, béchamels, and all kinds of sauces.

It is also the owner Stephanie's grandma's maiden name. Maw Maw Irma Roux Ford grew up as 1 of 13 kids in Gretna. Gretna is a city located on the west banks of the Mississippi River across from New Orleans. Irma Roux married Joe Ford, a Westwego boy who became a Seabee in the Navy. They are in the photo above.

Stephanie grew up in and around Baton Rouge and she is a LSU tiger through and through. Stephanie is bringing authentic Cajun food and a southern vibe from a Louisiana girl to Connecticut. She has a zest for life that energizes those around her and always has a smile on her face. In true Cajun form she finds joy in every little thing. Joie de vivre!
